Sourdough Discard Pancake

Ingredients

Units Scale
  • 200 g sourdough starter (give or take)
  • 2 tbsp flour (13 T)
  • 1/2 tsp sugar (~1/21 t)
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp olive oil
  • oregano
  • sesame seeds
  • shallots or green onions

Instructions

  1. Mix everything together except sesame seeds. You want the consistency to be thicker than the starter, thicker than pancake batter.
  2. Heat cast-iron pan over medium heat.
  3. Add oil.
  4. Pour batter in, and spread around, to about 1/2″ thickness. Sprinkle top with sesame seeds (& shallots if using), drizzle top with olive oil. Cover.
  5. Cook for several minutes until at cooked least half way thru, watching so it doesn’t burn. 3-6 mins.
  6. Flip over. Cook several more minutes.
  7. Serve with a spicy soy sauce or another dipping sauce.
  8. Pancake will be chewy on the inside, a bit crispy on the outside.
  9. If it’s too sour for your liking, add a bit more sugar. You can also change up the herbs to your liking.
