Sourdough Discard Pancake

- 200 g sourdough starter (give or take)
- 2 tbsp flour (1–3 T)
- 1/2 tsp sugar (~1/2–1 t)
- 1/2 tsp garlic powder
- 1 tsp salt
- 1 tsp olive oil
- oregano
- sesame seeds
- shallots or green onions
Instructions
- Mix everything together except sesame seeds. You want the consistency to be thicker than the starter, thicker than pancake batter.
- Heat cast-iron pan over medium heat.
- Add oil.
- Pour batter in, and spread around, to about 1/2″ thickness. Sprinkle top with sesame seeds (& shallots if using), drizzle top with olive oil. Cover.
- Cook for several minutes until at cooked least half way thru, watching so it doesn’t burn. 3-6 mins.
- Flip over. Cook several more minutes.
- Serve with a spicy soy sauce or another dipping sauce.
- Pancake will be chewy on the inside, a bit crispy on the outside.
- If it’s too sour for your liking, add a bit more sugar. You can also change up the herbs to your liking.
